Matsuura Shuzo’s Commitment

Ishikawa prefecture is blessed with fresh ingredients from mountains and sea. Matsuura Shuzo brews sake to complement these seasonal foods, with a gentle fragrance like a deep breath of fresh mountain air.
Japanese sake brewing relies on the alchemy of rice, water, and microorganisms. Enzymes from koji (Aspergillus oryzae) convert rice starch into sugar that feeds alcohol-producing yeast; koji also opens the flavors of food.
We produce only pure Junmai style (without brewers’ alcohol or sugar) to honor the miraculous power of nature.
